Viniou - wine cellar management made simple
Fonseca Guimaraens Bin No. 27 is one of the most recognisable and accessible non-vintage Ports from Portugal. Crafted as a blend of vintages, this Ruby Port draws heavily on grapes sourced from Fonseca’s own prized vineyards in the Douro Valley. The cuvée’s character is shaped by the typical indigenous grape varieties of the region, notably Touriga Nacional, Touriga Franca, Tinta Roriz, and Tinta Barroca. After careful vinification to extract both fruit and colour, the wine matures for a few years in large oak vats to retain freshness and vibrancy. The Bin No. 27 is renowned for its deep ruby colour, intense aromas of blackcurrant, plum, and cherry, enhanced with subtle hints of chocolate and spice on the palate. Its approachable style strikes a balance between richness and a lively, fruit-driven freshness.
The Douro region itself, the cradle of all true Port, boasts a unique terroir composed of steep schistous terraces along the Douro River. The hot, dry summers and cold winters, combined with poor, rocky soils, promote low yields and high-quality grapes. Vineyards have been established here since Roman times, but Port as we know it has flourished since the 17th century. Fonseca is one of the historic producers, celebrated for wines with depth and opulence.
Ruby Ports like this are very versatile at the table. Bin No. 27 pairs wonderfully with mature hard cheeses, such as aged cheddar or Portuguese queijo da Serra. Classic dessert pairings include chocolate cake, dark chocolate tart, berry compote, or a traditional Portuguese pastel de nata for a regional touch. The fruit-forward nature also stands up well to foie gras or richly flavoured game dishes, making it a great companion for both sweet and savoury moments.
For optimal tasting, serve this Port slightly chilled, between 14 and 16°C. A magnum format preserves freshness and enables sharing; simply decant to aerate if you wish, and enjoy the exuberance of youthful fruit so emblematic of Fonseca’s Bin No. 27.
