Podere Sapaio’s Volpolo 2019 from the Bolgheri DOC in Tuscany is a modern Italian red blend that showcases the elegance and power of the region’s Bordeaux-inspired winemaking. The cuvée Volpolo is typically composed of Cabernet Sauvignon, Merlot, and Petit Verdot, a blend that reflects the area’s affinity for international varietals while benefitting from the Tuscan sun. The 2019 vintage enjoyed a relatively balanced growing season, with warm days and cool nights, allowing the grapes to ripen fully while retaining freshness. Vinification tends to emphasise gentle extraction, with fermentation in stainless steel and often a period of maturation in French oak to refine structure and add complexity. The result is a deep ruby-coloured wine with an expressive bouquet of blackcurrant, blackberry, and plum, nuanced by hints of tobacco, cedar, and Mediterranean herbs. On the palate, expect a supple yet structured mouthfeel, with polished tannins and a lingering, subtly spicy finish.
The Bolgheri region, lying along Tuscany’s coastal strip, benefits from a temperate Mediterranean climate. Proximity to the Tyrrhenian Sea moderates temperatures and imparts a refreshing maritime influence, while the soils—rich in sand, clay, and gravel—promote good drainage and encourage deep-rooted vines. Although a relative newcomer compared to other Tuscan appellations, Bolgheri has quickly established itself with its high-quality Super Tuscan reds, a testament to both the region’s pioneering spirit and the unique terroir that balances New World power with Old World finesse.
Given Volpolo’s supple texture, ripe fruit and savoury complexity, it is a versatile companion at the table. It pairs beautifully with classic Tuscan fare such as bistecca alla fiorentina, roast lamb, or wild boar ragù. Its structure also stands up well to aged hard cheeses like pecorino or a hearty mushroom risotto. Grilled vegetables and earthy dishes echo the wine’s herbal edge.
To best appreciate Volpolo’s aromatic depth and polished structure, serve it at 16-18°C. Decanting for an hour will allow the bouquet to fully blossom and soften the tannins, offering a rewarding tasting experience both now and for several more years to come.
