Château de la Liquière's Cuvée Cistus 2021 is a fine representation of the Faugères appellation in southern France’s Languedoc region. This red blend is typically composed of Syrah, Grenache, Mourvèdre, Carignan, and a touch of Cinsault, showcasing the signature varietals that thrive in this sun-drenched terroir. The 2021 vintage, marked by a balanced climate, allowed for optimal ripening, imparting a harmonious profile of dark berry fruit, black cherry, and hints of wild herbs (garrigue). The vinification process emphasises gentle extraction, preserving the aromatic complexity and freshness. Ageing in a combination of stainless steel and neutral oak enhances suppleness while allowing the purity of the fruit and the mineral backbone typical of Faugères schist soils to shine.
Faugères is one of the Languedoc’s standout crus, distinguished by its rolling vineyards laid over ancient schist slopes. The Mediterranean climate provides ample sunshine, but the region benefits from cooling breezes and significant diurnal temperature variation, which helps maintain acidity and freshness in the wines. The schistous soils are particularly prized, lending an unmistakable mineral character and adding finesse to the bold flavours. Historically, Faugères has been a hub for robust reds since the Middle Ages, with properties like Château de la Liquière championing a mix of tradition and precision in winemaking.
Cuvée Cistus pairs beautifully with hearty dishes. Think grilled lamb chops with rosemary, cassoulet – a slow-cooked southern French classic – or roast pigeon. The wine’s herbal nuances and ripe fruit also complement Provençal ratatouille, and its structure stands up well to mature cheeses such as tomme de montagne or Cantal.
For optimal enjoyment, serve this wine at 16-18°C. Decanting an hour before tasting will help the aromas and flavours open up, revealing the complexity and generous character of the 2021 vintage. This cuvée promises great drinking now but will reward a few years of cellaring.
