Chablis Cuvée Talva Monopole 2023 from Domaine George represents one of the finest expressions of Chardonnay from the northernmost reaches of Bourgogne. This cuvée, classified as a "Monopole," originates from a specific, single-owner vineyard, which allows for precise viticultural control and character. The 2023 vintage in Chablis experienced a relatively cool spring followed by a warm, dry summer, yielding grapes with excellent balance between freshness and ripeness. Vinification is typically carried out in stainless steel to capture the pure varietal notes and the hallmark minerality of the region, with little to no influence from oak, yielding a wine of crystalline clarity and precision. Expect aromas of green apple, white flowers, lemon zest, and a tactile minerality that speaks of its Kimmeridgian marl soils—rich in ancient marine fossils.
Chablis stands apart within Bourgogne thanks to its terroir and climate. The Chablisien, centred around the medieval town of Chablis, benefits from a cool, semi-continental climate that preserves acidity and delicacy in the grapes. The soils are predominantly Kimmeridgian, a mix of clay and limestone with fossilised oyster shells, imparting the famous "goût de pierre à fusil"—a hint of wet stone and flint. Vines have been cultivated here since Roman times, but Chablis truly rose to international prominence in the 19th century for its unique, vibrant style.
This Chablis is impeccably suited to seafood, especially oysters, mussels, and shellfish—its saline, citrus-edged palate complementing fresh marine flavours. Classic French pairings include pike perch in beurre blanc or parsleyed snails, though it also works beautifully with soft goat’s cheese and sushi. For a taste of the region, try it alongside "jambon persillé," a Burgundian ham terrine.
To fully appreciate its aromatic precision and vivid freshness, serve this Chablis well-chilled, ideally at 8-10°C. Decanting is not necessary, but letting it breathe for a few minutes in the glass will reveal additional layers of citrus, floral notes, and mineral depth.
