Château Clerc Milon 2000 embodies the distinctive character of Pauillac, a leading appellation in Bordeaux’s Médoc region. The wine is a classic left-bank Bordeaux blend, typically dominated by Cabernet Sauvignon, with significant proportions of Merlot, complemented by touches of Cabernet Franc, Petit Verdot, and sometimes Carménère. The 2000 vintage is widely regarded as exceptional, thanks to a warm, dry growing season that allowed the grapes to reach perfect maturity, ensuring depth, concentration, and remarkable ageing potential. At Clerc Milon, vinification adheres to traditional Médoc methods: fermentation in stainless steel vats followed by ageing in French oak barrels, a significant percentage of which are new, to best integrate the wine’s tannins and impart subtle aromatic nuance.
Pauillac owes its greatness to the unique terroir of deep gravel soils over limestone and clay, providing superb drainage and heat retention, ideal for ripening Cabernet Sauvignon. The proximity to the Gironde estuary moderates temperatures and reduces risk of frost, while the region’s maritime climate contributes both freshness and complexity to the wines. Historically, Pauillac is home to many of Bordeaux’s most celebrated classified growths, with a reputation for producing structured, age-worthy reds marked by layers of blackcurrant, cedar, tobacco, and refined tannins.
A mature Clerc Milon offers a harmonious balance of rich cassis and blackberry fruit, notes of cigar box, leather, and earthy spice, all wrapped in a silky yet structured frame. It pairs beautifully with classic French dishes such as roast lamb with rosemary, beef Wellington, duck breast, or entrecôte Bordelaise. Regional specialities like Pauillac lamb or even more adventurous pairings, such as wild game or truffle-infused mushroom dishes, will complement the wine’s depth and savouriness.
For optimal enjoyment, decant the wine at least an hour before serving to allow the bouquet to unfurl. Serve at a temperature of 17-18°C, which will bring out its aromatic complexity and finesse, making your tasting experience truly memorable.
