The 2017 Ink Grade Howell Mountain Cabernet Sauvignon is an exceptional example of California’s high-elevation red wines. Produced mainly from Cabernet Sauvignon grapes, this cuvée captures the deep, brooding character typical of Howell Mountain, a celebrated AVA within Napa Valley. The vintage experienced a long, even growing season, allowing for optimal ripening and the development of intense flavour concentration. In the cellar, Ink Grade employs traditional fermentation techniques and judicious use of oak ageing, resulting in a wine that balances power with finesse. The glass reveals a dense ruby hue, with aromas of blackcurrant, dark cherry, earthy graphite, and subtle undertones of vanilla and cedar. On the palate, expect firm tannins, vibrant acidity, and lingering notes of mocha and spice, promising graceful ageing.

Howell Mountain itself is renowned for its volcanic soils, elevation, and unique microclimate. Sitting well above the Napa Valley floor, the region’s altitude—often above the fog line—provides intense sunlight and cooler nights. This combination yields grapes with thicker skins and greater structure, leading to wines celebrated for their depth and longevity. Since gaining AVA status in 1983, Howell Mountain has forged a reputation for producing some of Napa’s most sought-after, ageworthy Cabernets.

For food pairing, this robust, structured Cabernet Sauvignon shines alongside equally bold dishes. Consider a classic pairing with dry-aged ribeye steak, grilled rack of lamb with rosemary, or venison with juniper berries. Mushroom risotto infused with black truffle would also complement its earthy nuances. To bring in local flavour, try it with American barbecue ribs, slow-cooked short ribs, or a hearty beef pot roast.

For optimal enjoyment, decant the wine for at least one hour before serving to allow full aromatic expression and soften the tannins. Serve at 16-18°C to reveal its complexity while maintaining freshness. This wine has significant ageing potential, but already displays impressive balance and character.
