Psi 2018, crafted in the renowned Ribera del Duero DO appellation in Castille and León, Spain, is the brainchild of acclaimed winemaker Peter Sisseck. This red wine, predominantly composed of Tempranillo (known locally as Tinto Fino or Tinta del País), sometimes blended with small amounts of Garnacha, encapsulates the region’s authentic character. The 2018 vintage benefited from a balanced growing season, marked by moderate temperatures and adequate rainfall, encouraging a slow ripening process that resulted in remarkable concentration and freshness. Psi is vinified with minimal intervention, using traditional concrete and large wooden vats, to express purity of fruit and the essence of old vines, many of which are over 30 years old.
The Ribera del Duero region, nestled along the Duero River, is celebrated for its extreme climate—hot, dry summers and cold winters—paired with high altitude vineyards perched between 700 and 900 metres. The sunlight is intense but nights are cool, allowing grapes to mature gradually, developing aromatic richness while retaining acidity. The soils are a mix of clay, limestone, and sand, providing excellent drainage and imbuing the wines with structure and minerality. Historically, viticulture in Ribera del Duero dates back to Roman times, but its international acclaim flourished in the late 20th century, now standing among Spain’s most prestigious wine regions.
Psi 2018, with its vibrant dark fruit notes—think black cherry, fresh plum, and hints of violet, interlaced with subtle spices and a gentle savoury undertone—pairs beautifully with a range of dishes. It is particularly compelling alongside classic Castilian cuisine such as roast lamb (lechazo asado), aged Manchego cheese, grilled chorizo, or slow-cooked beef stews. For a broader appeal, consider it with rosemary-infused lamb shanks, wild mushroom risotto, or hearty vegetarian casseroles, where its freshness and supple tannins complement savoury, umami-driven flavours.
For optimal enjoyment, serve Psi 2018 at 16-18°C, ideally after an hour of decanting to fully reveal its aromatic complexity and elegance. The wine is approachable now but has the structure to reward several more years in the cellar.
