This cuvée is crafted primarily from Tinto Fino (the local name for Tempranillo), with small proportions of Merlot and Malbec, depending on the vintage. The 2007 vintage benefited from a mild, steady growing season, promoting slow and even grape maturation. Valbuena 5° is so named for its traditional ageing period of five years, which combines time in both French and American oak followed by a further period in bottle. This careful vinification lends the wine a complex, layered profile: aromas of black cherry, plum and dried fig mingle with notes of tobacco, cedar, leather and sweet baking spices, all carried by a refined tannic structure and a long, savoury finish.
