Dominio de Pingus 2021 is a highly esteemed red wine from the Ribera del Duero DO, one of Spain’s most renowned appellations within Castile and León. Crafted almost exclusively from old-vine Tempranillo (locally known as Tinto Fino), this wine epitomises the concentration and elegance for which the estate has become legendary. The 2021 vintage was marked by relatively mild conditions, allowing slow ripening that enhanced the aromatic finesse and freshness in the final wine. The grapes are hand-harvested from biodynamically tended plots, then fermented using native yeasts before being matured in a mix of new and used French oak barrels. This meticulous approach results in a deep, expressive wine with layers of ripe black fruit, violets, subtle spice, and graphite, underpinned by silky yet powerful tannins and a lingering mineral complexity.

Ribera del Duero sits on Spain’s northern plateau, where the dramatic continental climate means cold winters and hot, dry summers—perfect for crafting structured, age-worthy reds. The region’s high elevation, with many vineyards above 800 metres, subjects the vines to substantial diurnal temperature swings, preserving acidity and aromatic intensity in the grapes. The soils are typically a mix of clay, limestone, and sandy loam, giving the wines their distinctive depth and finesse. While Ribera del Duero’s winemaking history dates to Roman times, its elevation into the world spotlight is more recent, driven in large part by visionary estates like Pingus.

At table, Dominio de Pingus 2021 is a superb partner to robust dishes that can stand shoulder to shoulder with its intensity. Traditional Castilian roast lamb, preferably slow-cooked with herbs, is a perfect match, as is ribeye steak grilled over vine wood. The wine’s finesse also elevates earthy mushroom ragouts, rich game birds, or mature Manchego cheese.

For optimal enjoyment, serve at 16-18°C, ideally after decanting for at least two hours to allow the aromas and textures to unfold fully. This wine will reward patience, ageing gracefully over the next 15-20 years.
