Bodegas Tradición’s Oloroso Tradición VORS 30 Years is a remarkable wine hailing from the sun-drenched region of Andalucía in southern Spain. As a non-vintage cuvée, this Oloroso falls under the VORS (Very Old Rare Sherry) classification, indicating an average age of at least 30 years, a hallmark of maturity and complexity. Oloroso sherry is produced through oxidative ageing in a solera system, resulting in a wine of deep amber to mahogany colour with an intense, nutty bouquet. The oxidative process, combined with the lengthy ageing, offers layers of aromas: roasted nuts, dried fruit, fine wood, tobacco, and subtle hints of caramel. Despite being classified under “Rouge”, Oloroso is typically a fortified dry wine, robust in structure with a persistent, warming finish.

Andalucía, and more specifically the Jerez triangle, is famed for its sherry production. The region enjoys a warm Mediterranean climate tempered by Atlantic breezes, providing the ideal environment for fortification and lengthy barrel ageing. The soil, known locally as “albariza”, is chalky and exceptionally good at retaining moisture, which is essential in such a warm and dry climate. Centuries of tradition and the renowned expertise of Jerez bodegas like Tradición have established the area as the spiritual home of sherry, combining heritage, terroir, and innovative ageing techniques.

Oloroso sherries of this calibre pair exceptionally well with rich, savoury dishes. Try it alongside Iberian acorn-fed ham, intensely flavoured aged cheeses like Manchego, or traditional Andalusian oxtail stew (rabo de toro). Its robust character also stands up beautifully to game, mushrooms, and dishes incorporating caramelised onions or balsamic reductions.

For optimal enjoyment, serve this Oloroso slightly below room temperature, ideally between 14-16°C. Whether as a contemplative aperitif, with a fine meal, or in place of a digestif, allow it time to breathe in the glass: its bouquet and palate will only grow in complexity as it opens up.
