Palomino is a white grape variety primarily renowned for its central role in the production of Sherry wines from the Andalusian region of Spain, particularly Jerez. Its discreet aromatic profile is characterised by delicate notes of green apple, almond, and subtle floral undertones, often accompanied by a gentle saline nuance due to the region’s proximity to the sea. Palomino wines tend to be light-bodied, with moderate acidity and a smooth, dry finish, making them exceptionally versatile for both dry and fortified wine styles.
Beyond its home in southern Spain, small plantings exist in South Africa and Australia, but it is in Jerez where Palomino truly excels. The grape forms the backbone of a range of Sherry styles, from the crisp, bone-dry Fino and Manzanilla to richer, nutty expressions like Amontillado and Oloroso.
Due to its subtlety, Palomino-based wines pair effectively with seafood, cured meats such as Jamón Ibérico, olives, almonds, and a variety of tapas. Fino and Manzanilla complement light fish dishes and shellfish, while Amontillado and Oloroso work well with richer fare like grilled meats and hard cheeses.
