Fattoria le Pupille’s Saffredi 2022 is an iconic red blend from Tuscany, widely celebrated as one of the region’s benchmark Super Tuscans. Typically composed of Cabernet Sauvignon, Merlot, and Petit Verdot, the cuvée is meticulously crafted from hand-harvested grapes grown on well-exposed vineyards near the coastal Maremma area. The 2022 vintage benefitted from a warm and relatively stable growing season, resulting in deeply coloured, expressive wines. The winemaking process generally involves fermentation in stainless steel, followed by ageing in new French oak barriques for up to 18 months, which helps integrate powerful tannins and provide complexity and polish to the finished wine.
Tuscany's rich winemaking legacy is deeply rooted in its rolling hills and distinctive microclimates. The region’s terroir is defined by its well-drained, mineral-rich soils composed of clay, limestone, and sand, offering vitality and structure to its wines. The Mediterranean climate, influenced by both inland winds and maritime breezes from the Tyrrhenian coast, provides warm summers and mild winters, with significant diurnal temperature shifts enhancing aromatic concentration and freshness. Tuscany has a long history, dating back to the Etruscans and Romans, and today is renowned for both traditional Sangiovese-based wines and international-style reds like Saffredi.
This wine’s bold structure and layered aromas of ripe dark fruit, spice, cedar, and a hint of tobacco make it a superb partner for rich, flavourful dishes. Tuscan classics such as bistecca alla fiorentina (grilled T-bone steak), wild boar ragù with pappardelle, or aged pecorino cheese will showcase the wine’s depth and finesse. It also pairs beautifully with roast lamb or game and can stand up to hearty dishes with rosemary or truffle elements.
To best appreciate Saffredi’s complexity, decant it for at least an hour and serve at 16-18°C. This will allow the tannins to soften and the nuanced aromatics to fully unfold, offering a memorable tasting experience that reflects both the skill of Fattoria le Pupille and the unique character of Maremma’s terroir.
