The Ripasso method, unique to this region, involves re-passing a young Valpolicella wine over the pomace of Amarone or Recioto. This process imparts greater body, depth, and complexity, enriching the wine with additional tannins, residual sugars, and aromatic compounds. The main grape varieties involved in this blend are Corvina, Rondinella, and often a touch of Molinara, resulting in a ruby red wine with notes of black cherry, plum, dried fruit, and a hint of sweet spice. The 2021 vintage shows ripe but balanced fruit, velvety tannins, and an elegant structure, thanks to Zenato’s meticulous attention to both vineyard and cellar.

Valpolicella, nestled in the Veneto region of north-eastern Italy, benefits from a temperate climate influenced by Lake Garda to the west and the sheltering Lessini Mountains to the north. The soils are diverse but predominantly consist of limestone, clay, and volcanic basalt, contributing to the freshness and minerality of the wines. This historic region has a winemaking tradition that dates back to Roman times and is particularly celebrated for its unique techniques, such as the appassimento (drying of grapes) and ripasso, which lend its wines considerable character and ageing potential.

The rich yet supple style of Ripasso pairs beautifully with a variety of dishes. Locally, it would be served alongside braised beef or veal (such as brasato all’Amarone), wild mushroom risotto, or mature cheeses like Monte Veronese. Its warmth and soft spice also complement Mediterranean stews, roasted game birds, or even a hearty lamb ragù. For vegetarian fare, consider pairing with grilled aubergine or a lentil and root vegetable casserole.

Decanting for about an hour before serving will allow the wine to fully express its aromatic complexity and soften the tannins, making each sip round and harmonious.
