Corvina is a distinguished red grape variety native to the Veneto region in north-eastern Italy, notably thriving in areas such as Valpolicella and Bardolino. Renowned for its vibrant aromatic profile, Corvina delivers enticing notes of sour cherry, redcurrant, and plum, often accentuated by hints of almond, violet, and delicate spice. On the palate, it offers bright acidity and soft tannins, resulting in wines that are lively, medium-bodied, and elegantly balanced, occasionally with a subtle bitter twist on the finish.
Corvina is essential in producing both classic, refreshing Valpolicella wines and the more concentrated, luxurious Amarone della Valpolicella – the latter utilising partially dried grapes to intensify richness, prune and chocolate nuances, and structure. Additionally, it features in the fruity, lighter Bardolino wines and is instrumental in the creation of Recioto, a sweet, full-bodied dessert wine.
In terms of food pairings, Corvina-based wines shine alongside traditional Italian fare such as risotto, charcuterie, roasted poultry, and grilled vegetables. The richer Amarone styles pair beautifully with aged cheeses, braised meats, and game, while lighter styles provide a delightful match for antipasti, pasta dishes, or mild cheeses.
