The Calitro Cuvée Ausilio 2023 Primitivo di Manduria is an expressive red wine crafted from Primitivo grapes, a varietal celebrated for producing robust and full-bodied wines. Harvested from the sun-drenched vineyards of Manduria in the Puglia region, this cuvée showcases the grape’s signature deep ruby hue and opulent fruit profile. The 2023 vintage, shaped by a warm growing season, yields an abundantly ripe bouquet of black cherries, plums and wild berries, with subtle notes of sweet spices and cocoa. Traditional vinification methods allow for optimal extraction of flavour and tannin, resulting in a rich, smooth and velvety palate, supported by a rounded structure and gentle acidity.
Primitivo di Manduria DOC is situated in the heart of southern Puglia – the “heel” of Italy’s boot – where the Mediterranean climate prevails with hot, dry summers and mild winters. The local red, iron-rich clay soils and limestone substrates contribute both power and minerality, enhancing the wine’s complexity and ability to age. Primitivo has ancient roots in the region and is closely related to Zinfandel, yet expresses a distinctively Mediterranean character here, shaped by centuries of tradition. This historic region is renowned for its bold reds, which have earned international acclaim for their balance between richness and freshness.
This Primitivo di Manduria makes an excellent partner for hearty dishes, especially those inspired by Pugliese cuisine. Pair it with slow-cooked lamb or beef, rich tomato-based ragù, or a classic orecchiette with sausage and turnip greens. It also complements aged cheeses such as pecorino, or Mediterranean charcuterie with cured meats and olives. The lush fruit and supple tannins of the wine stand up well to flavourful, savoury fare.
For optimal enjoyment, serve the Calitro Cuvée Ausilio 2023 slightly below room temperature, ideally between 16–18°C. Decanting the wine for 30 minutes before serving will allow its full bouquet and layered flavours to unfold beautifully.
