The 2020 Testamatta from Bibi Graetz is a true embodiment of contemporary Tuscan winemaking. Crafted predominantly from Sangiovese grapes, this cuvée showcases a meticulous selection of old vines grown on hillside vineyards surrounding Florence. The terroir here, composed mainly of galestro (a schistous clay soil typical of Tuscany), contributes greatly to the wine’s aromatic complexity and fine tannic structure. Vinification is carried out with great attention: fermentation occurs in open top barrels with wild yeasts, and the wine is matured in a mix of new and old oak to preserve freshness while providing subtle depth and texture.
