This cuvée highlights the artistry of the appassimento technique, where carefully selected grapes are semi-dried over several months before fermentation, concentrating sugars and aromas. The 2017 vintage brought a warm, balanced season, yielding wines of rich structure and expressive fruit. Local Veronese favourites like risotto all’Amarone or aged Monte Veronese cheese accentuate its character. Its nuanced dried fruit and spice notes also work surprisingly well alongside dark chocolate desserts.
