Corvinone is a distinguished red grape variety predominantly grown in the Veneto region of northeastern Italy. Renowned for its role within classic blends, particularly in Valpolicella and Amarone wines, Corvinone imparts a distinct aromatic profile. On the nose, it offers expressive notes of black cherry, plum, and dried cranberry, accompanied by nuances of violets, subtle spices, and a touch of cocoa. On the palate, Corvinone produces medium to full-bodied wines with a fine balance of vibrant acidity and velvety tannins, often displaying flavours of ripe red and dark fruits, earthy undertones, and a sophisticated, lingering finish.
While its primary cultivation is centred around the provinces of Verona and its surroundings, Corvinone is most celebrated in wines crafted using the appassimento method, resulting in richly textured Amarone della Valpolicella and the lighter, fruit-driven Valpolicella Ripasso styles. The grape is equally adept in enhancing the complexity and longevity of traditional blends.
Corvinone-based wines pair excellently with rich and savoury dishes such as braised beef, roasted game, aged cheeses, and mushroom risotto. The grape’s inherent depth and freshness also complement dishes featuring herbs and spices, offering versatility across both rustic Italian fare and refined modern cuisine.
