Viniou Reviews

The 1985 Taittinger Cuvée Collection Vieira da Silva is a prestigious vintage Champagne, crafted exclusively from Chardonnay grapes, as indicated by its Blanc de Blancs composition. This cuvée owes its finesse and elegance to the meticulous méthode traditionnelle vinification, which allows for extended lees ageing and complex development of aromas. The 1985 vintage is regarded as excellent in Champagne, offering wines with impressive structure and remarkable longevity. The Cuvée Collection series is further notable for its collaboration with contemporary artists, making each bottle a collector’s item as well as a testament to Champagne’s artistry.

Champagne itself enjoys a unique terroir, with chalky soils imparting a distinctive minerality and freshness to the wines. The cool, northern French climate ensures gradual grape ripening, preserving vibrant acidity essential for producing refined sparkling wines. Rooted in centuries of history, Champagne has evolved into a symbol of celebration and sophistication, while houses like Taittinger uphold traditions of elegance and consistency.

For culinary pairings, this mature Blanc de Blancs is superbly versatile. Its delicate mousse and refined acidity make it an outstanding match for dishes such as poached turbot with beurre blanc, scallop carpaccio, or a creamy seafood gratin. Local Champagne traditions might also suggest pairing it with Chaource cheese, whose creamy texture and subtle flavours complement the wine’s aged complexity. Given the wine’s maturity, it can admirably support richer flavours as well, such as roast chicken with morel mushrooms or veal in a light cream sauce.

To fully appreciate this vintage, serve well-chilled but not ice-cold, ideally between 10 and 12°C. Decanting is generally not recommended for Champagne, but allow the wine a few minutes in the glass to reveal its depths. A fine crystal flute or tulip glass will best highlight its elegant mousse and aromatic complexity. Enjoy this exceptional bottle as a centrepiece for the most special occasions.
