Chanson Chablis 2018 is a quintessential expression of Chardonnay from one of Burgundy’s most renowned white wine appellations. Sourced from selected parcels in the Chablisien, this wine draws its personality from the Kimmeridgian soils which impart the classic minerality that Chablis is celebrated for. The 2018 vintage brought ripe and healthy fruit thanks to a warm, generous season, resulting in a wine combining crisp acidity with flavours of green apple, citrus zest and a distinct saline energy. Vinification typically leans towards stainless steel to preserve primary fruit and purity, with only minimal use of oak if any, enhancing the grape’s purity and subtlety.
Chablis, located in northern Burgundy, is a region shaped by its cool continental climate and unique terroir. The chalky, fossil-rich soils are a legacy of an ancient seabed, which lends Chablis it’s unmistakable ‘goût de pierre à fusil’—the taste of gunflint. For food pairings, Chanson Chablis 2018’s vibrant structure and bright minerality make it ideally suited to classic seafood dishes—think oysters, langoustines, or seared scallops. Fresh goat’s cheese, especially the regional Crottin de Chavignol, is an excellent partner.
