Viniou Reviews

Domaine Chevalier 1990 from Pessac-Léognan is a classic Bordeaux red, reflecting both the rich heritage of its terroir and the exceptional quality of the 1990 vintage. This wine is typically composed of a blend dominated by Cabernet Sauvignon, with Merlot and occasionally small percentages of Cabernet Franc and Petit Verdot, allowing for a nuanced structure and aromatic complexity. The 1990 vintage is regarded as one of Bordeaux's outstanding years, yielding ripe fruit and well-integrated tannins, thanks to a warm, dry growing season. The wine is likely to exhibit mature aromas now: notes of blackcurrant, cigar box, leather and truffle, with developed tertiary nuances of forest floor, cedar and spice. Ageing in French oak barrels would have added a velvety texture, subtle vanilla, and smoky undertones, all seamlessly woven into the wine’s deep, layered profile.

The Graves region, and particularly the Pessac-Léognan appellation, is famed for its well-drained gravel soils, which impart elegance, minerality and finesse to the wines. The microclimate benefits from the moderating influence of the nearby Garonne river, leading to favourable ripening conditions. Pessac-Léognan has a long and illustrious history; it is considered the birthplace of Bordeaux fine wine, with estates dating back to the Middle Ages. The gravelly soils not only facilitate drainage but also reflect heat, encouraging even maturation of the grapes.

To accompany Domaine Chevalier 1990, opt for dishes that honour its evolved structure and earthiness. Classic Bordeaux cuisine such as entrecôte à la Bordelaise, rich in flavour and with a red wine-based sauce, makes a superb match. Roast lamb with herbs, pigeon or duck confit will also highlight the wine’s depth. For an elegant option, try truffle risotto or wild mushroom dishes, which will resonate with the wine’s tertiary savoury notes. Mature hard cheeses like Comté or aged Gouda can be savoured at the end of the meal.

For optimal appreciation, decant the wine gently to remove sediment and allow it to breathe for at least one hour. Serve at a temperature of 17-18°C to bring out both its marked aromatic complexity and refined palate structure. This wine is at full maturity but will hold gracefully for a discerning client wishing to experience the grandeur of classic Pessac-Léognan.
