Château Pichon Baron 1990 hails from the renowned Pauillac appellation in the Médoc region of Bordeaux, France. This exceptional vintage is produced predominantly from Cabernet Sauvignon, complemented by Merlot and occasionally small proportions of Cabernet Franc and Petit Verdot. The 1990 vintage is particularly esteemed in Bordeaux, benefiting from a warm and consistent growing season that delivered both opulence and structure to the wines. In the cellar, the wine is traditionally vinified and aged in French oak barrels, a significant portion of which are new, allowing for perfect integration between fruit and oak and contributing to its impressive ageing potential. The result is a deep, complex wine displaying layers of cassis, black cherry, cedar, tobacco, and graphite, underpinned by mature tannins and a lingering finish. After more than three decades, a wine like this reaches its peak, evolving secondary and tertiary aromas of leather, truffle, and forest floor.

The Pauillac appellation, situated on the Left Bank of the Gironde estuary, is celebrated for some of the greatest wines in Bordeaux. The region’s gravelly soils provide excellent drainage, perfectly suited to Cabernet Sauvignon, which thrives under the influence of the temperate maritime climate. These conditions contribute to producing concentrated wines with power, depth, and a remarkable capacity for ageing. Historically, Pauillac has been at the heart of Bordeaux’s wine tradition, boasting prestigious estates with centuries-old legacies.

Pairing such a distinguished Pauillac demands cuisine of equally fine character. Classic Bordeaux pairings such as grilled entrecôte, roast lamb with garlic and thyme, or magret de canard beautifully enhance the savoury and earthy nuances of the wine. For a regional touch, consider confit de canard or a Bordelaise sauce. Mature hard cheeses like Comté or aged British Cheddar also offer an excellent match, as they harmonise with the evolved flavours and structure of the wine.

For the ideal tasting experience, decant the wine for at least one hour to allow it to fully open. Serve it at a temperature of 17-18°C to highlight its subtle aromas and refined palate. This is a grand wine perfectly suited to contemplative sipping and fine dining alike.
