Château Chasse-Spleen 2014 from the Moulis-en-Médoc appellation is a classic left bank Bordeaux, showcasing the elegance and structure that the region is renowned for. This red is a blend predominantly of Cabernet Sauvignon, complemented by Merlot and a hint of Petit Verdot, which imparts additional complexity and a subtle aromatic lift. The 2014 vintage benefited from a cool but sunny September, allowing the grapes to reach excellent phenolic ripeness after a challenging summer. Oak ageing, typical for the estate, brings nuanced notes of cedar and spice, harmonising with Chasse-Spleen's hallmark of ripe blackcurrant, cherry, and plum fruit, underscored by graphite and earthy undertones.
Moulis-en-Médoc is nestled between Margaux and Saint-Julien, benefiting from both the gravels that dominate the Médoc and pockets of clay and limestone. These well-drained gravel soils impart a minerality and structure, making the wines of Moulis forthright yet refined. The region enjoys a temperate maritime climate, influenced by the Atlantic, which both tempers extremes and extends the ripening season, notably for Cabernet Sauvignon. With a history of viticulture dating back to Roman times, Moulis today is known for producing stylish wines with excellent ageing potential, often at a more accessible price than its prestigious neighbours.
For food pairings, this wine’s structure and depth make it ideal with classic French fare such as entrecôte à la bordelaise or roast rack of lamb with herbs. The firm tannins will also complement game birds or duck breast, while the wine's freshness suits dishes with mushroom or truffle accents. For a regional touch, consider pairing it with canard aux cèpes or a simple bordelaise sauce.
Decant for an hour to allow its aromatics to open. Serve at 16-18°C for best expression. The 2014 vintage is drinking beautifully now but will reward a few more years of cellaring if you prefer more developed, tertiary notes.
