La Sirène de Giscours 2008 is the second wine of the esteemed Château Giscours, located in the Margaux appellation within the Médoc region of Bordeaux. This cuvée is predominantly crafted from Cabernet Sauvignon and Merlot, with smaller portions of Cabernet Franc and Petit Verdot, typical of the classic Bordeaux blend. The 2008 vintage benefited from a rather traditional vinification process, with careful extraction and ageing in French oak barrels, some of which are new to ensure fine integration of tannins and subtle oak aromas. The wine, now with ample bottle age, displays an inviting bouquet of ripe blackcurrants, cassis, dark cherry, tobacco, cedar, and subtle hints of graphite. On the palate, it is structured yet elegant, showcasing the finesse and floral notes for which Margaux is renowned, accompanied by a persistent finish and silky tannins.
Margaux is the southernmost appellation of the Médoc, graced by an exceptional terroir. The soils here are predominantly deep, well-drained gravels, perfectly suited to the cultivation of Cabernet Sauvignon, which thrives in these conditions. The proximity to the Gironde estuary moderates the climate, tempering both heat in the summer and frost in the winter, providing ideal conditions for optimum grape ripening. Margaux's historic reputation for producing some of the most perfumed and refined Bordeaux wines can be traced back centuries, and Château Giscours is an integral part of this region’s vinous legacy.
This wine’s graceful structure and layered aromatics make it a superb partner for classic Bordelais cuisine, such as entrecôte à la bordelaise (ribeye with red wine and shallot sauce), roast duck with fruits, or lamb shoulder slow-roasted with herbs. For a regional touch, try it with cèpes or other wild mushrooms sautéed in garlic, which will complement the wine’s earthy undertones. It also pairs beautifully with hard cheeses such as aged Comté or mimolette.
For optimal enjoyment, decant the wine for at least one hour to allow the aromatic complexity to open up, and serve at 16-18°C. This temperature best reveals the wine’s bouquet and ensures a harmonious tasting experience.
