Typically crafted predominantly from Malbec (often known locally as Côt or Auxerrois), sometimes blended with small proportions of Merlot or Tannat, Cahors reds are renowned for their deep colour, robust structure, and expressive character. The 2020 vintage was marked by a warm, sunny growing season with enough cool nights to ensure freshness and balance in the resulting wines. Vinification in Cahors often includes extended maceration to extract the grape's dark pigment and savoury tannins, followed by ageing in oak barrels or vats, depending on the producer's style.

The region of Cahors stretches along the Lot River, benefiting from its terraces and gravelly soils that provide excellent drainage and impart a distinct mineral backbone to the wine. The nearby Massif Central’s foothills provide a continental climate tempered by riverine influence, encouraging both ripeness and intensity. Cahors has a rich vinous history, known since Roman times and cherished throughout the Middle Ages for its “black wine.” Today, the appellation is experiencing a renaissance, with producers seeking greater finesse while respecting the power that defines Cahors.
