Viniou Reviews

Nyetimber's Classic Cuvée is a quintessential example of English sparkling wine, crafted exclusively from Chardonnay grapes, hence the blanc de blancs designation. This non-vintage cuvée is produced using the traditional method—identical to that of Champagne—with a secondary fermentation in the bottle, resulting in fine, persistent bubbles and remarkable complexity. The grapes are sourced from estate-owned vineyards in Sussex, one of England’s most renowned wine regions. Each year, base wines from several recent vintages are expertly blended to achieve a consistent style that balances freshness, elegance, and depth.

Sussex, located in the south of England, benefits from a cool maritime climate and the favourable chalky soils that have made the region well suited to the cultivation of classic Champagne grape varieties. The cool growing season allows grapes to ripen slowly, preserving high natural acidity—a hallmark of top-quality sparkling wine. The region’s viticultural history is relatively recent but has rapidly grown, transforming Sussex into a hub for English sparkling wine production. The combination of gentle slopes, well-drained soils, and a shifting microclimate contribute to the unique character and purity of wines from this area.

For food pairing, Nyetimber Classic Cuvée’s crisp acidity, delicate mousse, and vibrant citrus and green apple notes make it exceptionally versatile. It pairs beautifully with fresh seafood—think oysters, scallops or a classic English smoked salmon. The wine’s minerality and finesse also make it an excellent companion to tempura, sushi, or light, creamy cheeses such as Sussex Slipcote. For a local touch, serve with traditional dishes like potted shrimps or white crab salad.

To fully enjoy Nyetimber Classic Cuvée, serve it well-chilled, ideally between 6-8°C. This temperature range enhances its freshness and highlights the delicate aromatic profile. Use fine tulip-shaped flute glasses to capture the bouquet and showcase the finesse of its bubbles. For best appreciation, allow the wine a few minutes in the glass to gently open up.
