Palomino Fino is a white grape variety best known as the backbone of the renowned Sherry wines of Spain, particularly in the region of Jerez in Andalusia. This grape produces wines with a subtle, delicately aromatic profile, often exhibiting hints of almond, green apple, and saline minerality. On the palate, Palomino Fino wines are typically light to medium-bodied with moderate acidity and a soft, rounded texture, allowing the hallmark characteristics of terroir and winemaking processes, such as flor ageing, to shine through.
The principal regions for Palomino Fino cultivation are found in southern Spain, notably Jerez, Sanlúcar de Barrameda, and El Puerto de Santa María. Beyond Spain, small plantings exist in South Africa and Australia, though these are rare.
