Manincor's Cuvée Cassiano 2011 from Alto Adige (Haut-Adige DOC) is a sophisticated red blend that perfectly encapsulates the identity of its Northern Italian origins. The Cassiano is a skilfully composed cuvée, often combining local Lagrein and international varieties like Merlot, Cabernet Sauvignon, Cabernet Franc, Petit Verdot and sometimes Syrah. The 2011 vintage benefitted from an excellent growing season, allowing the grapes to achieve both ripeness and complexity. Vinification at Manincor favours gentle extraction, indigenous yeast fermentation, and ageing predominantly in oak barrels, imbuing the wine with both structure and an integrated palate.
Alto Adige, nestled in the foothills of the Alps on the border with Austria, boasts a unique terroir where Alpine and Mediterranean influences converge. The region’s dramatic altitude, ranging from 200 to over 1,000 metres above sea level, extends the growing season and supports aromatic intensity in the grapes. Soils are predominantly composed of glacial deposits, gravels, and sand, offering excellent drainage and mineral depth. Historically, Alto Adige has been a crossroads for cultures and grape varieties, fostering both innovation and respect for tradition in winemaking. The result is a consistently high quality across both white and red wines, with reds like Cassiano showcasing finesse and age-worthiness.
To fully appreciate the elegant structure and expressive fruit profile of the Cassiano 2011, pair it with robust dishes that echo the local cuisine. Traditional South Tyrolean specialities such as speck (smoked ham), venison ragù with pappardelle, or a hearty beef stew would be excellent, as would slow-cooked lamb or wild mushroom risotto. For a more international pairing, consider roasted duck or a classic ratatouille that highlights the wine’s herbal nuances.
Serve the Cassiano at 16-18°C in a broad glass to encourage aeration. If the wine has been cellared, decanting for about an hour will help to unveil its complexity. This will reveal the wine’s layered bouquet of dark fruits, spices and subtle earthy undertones, ensuring an optimal tasting experience.
