The grapes are harvested and then dried on racks for several months in a method known as appassimento, which concentrates their sugars and flavours before gentle pressing and fermentation. This process imbues Amarone with remarkable depth and intensity, manifesting in rich notes of ripe black cherry, dried plum, fig, cocoa, and a subtle undertone of spice. The resulting wine is full-bodied, robust, and complex, with a velvety mouthfeel and a lingering, elegant finish.

The Valpolicella area, nestled between Lake Garda and the city of Verona, boasts a winemaking history dating back centuries. The region enjoys a temperate climate, influenced both by the nearby lake and the sheltering Lessini Mountains, creating the ideal conditions for slow grape maturation and concentration of aromas. The soils here are varied, comprising limestone, clay, and basalt, lending structure and minerality to the wines. It is also an excellent accompaniment to aged cheeses like Parmigiano Reggiano or Grana Padano. For a regional touch, consider pairing it with classic Veronese dishes such as risotto all’Amarone or a hearty pastissada de caval, a traditional horse meat stew.

For optimum appreciation, decant the wine for at least an hour before serving to allow its aromas to open fully. Serve at a temperature between 17-18°C to reveal the full spectrum of its flavours and enjoy its luxurious depth. Amarone also benefits from further cellaring if desired.
