Viniou Reviews

The Crémant de Limoux AOC from the Languedoc region in France is a delightful sparkling white wine, here in its non-vintage "brut" style. Traditionally, Crémant de Limoux blends the region’s signature grape, Mauzac (locally known as Blanquette), with Chardonnay and Chenin Blanc. These grape varieties impart both freshness and complexity. The wine is crafted following the traditional method, identical to the méthode champenoise, with a secondary fermentation in the bottle that brings finesse to the bubbles and lends the wine its characteristic creamy texture and delicate mousse. As a brut, this Crémant is dry and typically offers notes of green apple, citrus zest, white flowers, and a hint of toasted brioche from ageing on lees.

The Limoux area, nestled at the foothills of the Pyrenees in the western Languedoc, enjoys a unique combination of Mediterranean sunshine and the cooling influence of Atlantic breezes. The vineyards are planted on diverse soils, with clay-limestone being particularly prized, and the increased altitude here (up to 500 meters) is a major asset, contributing to longer ripening periods and preserving the grapes’ natural acidity. Limoux is acknowledged as the cradle of sparkling wines, with documents attesting production dating back to 1531, well before Champagne’s rise to prominence.

This Crémant de Limoux is remarkably versatile at the table. Its zesty freshness and fine bubbles make it ideal as an aperitif, but it also pairs beautifully with oysters, smoked salmon, or sushi—the bracing acidity complementing the delicate flavours and cutting through any richness. For a regional twist, enjoy it alongside blanquette de veau, a creamy veal stew from the area, or a goat’s cheese tart with herbs. Its elegance also makes it an excellent companion for lightly spiced Asian dishes or a simple roast chicken with lemon.

To fully appreciate this Crémant de Limoux, serve it well-chilled at 6-8°C in tulip-shaped glasses to showcase its effervescence and aromatic complexity. It is best enjoyed fresh, within a couple of years of purchase, to capture its vivacity and vibrant fruit character.
