This wine is made exclusively from the Piquepoul grape, a variety celebrated for its vivacious acidity and delicate aromatic profile. The 2024 vintage benefits from a mild winter and a warm, dry spring, leading to optimal ripeness and purity of fruit. The vinification process usually involves fermentation in stainless steel tanks at controlled temperatures, in order to preserve the grape's natural freshness, aromatic intensity and characteristic minerality.

The Picpoul-de-Pinet appellation is situated close to the Mediterranean, bordered by the Thau lagoon. The climate here is typically Mediterranean, with hot, dry summers and mild, wet winters, but the breezes from the nearby sea help to moderate temperatures, ensuring slower, even ripening of the grapes and preserving their acidity. The soils are mainly composed of limestone, clay, and sandstone, contributing to the unique mineral streak found in the finished wines. Historically, the region has been making wine since at least Roman times, with Picpoul traditionally paired with the coastal cuisine for which the area is well known.

This crisp, zesty style of wine is a classic partner for seafood; oysters, mussels, grilled prawns, and local dishes like ‘moules farcies’ or ‘tielle sétoise’ (a spicy octopus and tomato pie) are particularly well suited.
