J. Laurens Cuvée Le Moulin Brut, from the Blanquette de Limoux appellation in the Languedoc region, is a traditional sparkling white wine from the south of France. As a non-vintage cuvée, it is crafted to represent the house style, capturing consistency and freshness across harvests. The classic Blanquette de Limoux is traditionally produced using the Méthode Traditionnelle, similar to Champagne, involving a secondary fermentation in the bottle. While the exact blend is not specified here, Blanquette de Limoux is most often based around the Mauzac grape—locally known as “Blanquette”—with potential additions of Chardonnay or Chenin Blanc, lending notes of orchard fruit and subtle floral overtones. The ‘brut’ style ensures a crisp, dry palate with vibrant bubbles and a lively, refreshing finish.

The Limoux region enjoys a unique position in the western Languedoc, nestled in the foothills of the Pyrenees. The area’s gentle climate benefits from both Atlantic and Mediterranean influences, which helps to maintain freshness and balanced ripeness in the grapes. The soils are generally composed of limestone and clay, contributing to the wine’s characteristic minerality and finesse. Limoux boasts a rich sparkling wine history, predating the fame of Champagne, with local abbeys having produced sparkling wines since at least the 16th century.

Cuvée Le Moulin’s effervescence and acidity make it a wonderful partner for a variety of foods. It is excellent as an apéritif, particularly alongside delicate canapés or soft cheeses. For a classic regional pairing, enjoy it with a slice of fougasse or the famed Blanquette de Veau from the Languedoc. Its freshness also works well with seafood—think freshly shucked oysters, smoked trout, or shellfish platters. Lighter Asian cuisine, such as sushi or tempura, is also beautifully complemented by its lively mousse and citrusy lift.

For best appreciation, serve well chilled at around 6–8°C. Pour gently into flute or tulip glasses to preserve the fine bubbles and enjoy young to capture the wine’s youthful exuberance.
