This renowned cuvée originates from the prestigious Les Demoiselles parcel, situated at the heart of the Chevalier-Montrachet Grand Cru vineyard. The 2014 vintage is recognised for its balance and finesse, offering both ripeness and vibrant acidity. Carefully hand-harvested and vinified using traditional Burgundian methods, the wine undergoes fermentation and maturation in French oak barrels, a proportion of which are new, to enhance the complexity and longevity without overshadowing the mineral character of the terroir.

Chevalier-Montrachet sits atop the famed Montrachet slope in the Côte de Beaune, one of the world’s greatest terroirs for Chardonnay. The vineyard’s higher altitude exposes it to cooler breezes, resulting in wines of particular elegance and tension. The soil is thin, stony, and rich in limestone, factors which promote superb drainage and impart a pronounced minerality to the wine. The history of Chevalier-Montrachet and Les Demoiselles, originally owned by the Demoiselles de Montille, dates back centuries, with these parcels being prized for their ability to produce wines of extraordinary refinement and ageing potential.

In terms of food pairings, this Grand Cru Chardonnay harmonises beautifully with luxurious dishes such as lobster in a light butter sauce, scallops with a saffron emulsion, or a delicate fillet of turbot with beurre blanc. For cheese, a well-aged Comté or a creamy Brillat-Savarin would suit superbly. Should you wish for a regional touch, poultry from Bresse with morel mushrooms is a splendid match, as is veal in a subtle cream sauce.

For the optimal tasting experience, serve this wine at a cool yet not overly chilled 12-14°C.
