At Roulot, meticulous organic methods in the vineyard pair with a sensitive approach in the cellar: gentle pressing, fermentation with indigenous yeasts, and careful maturation in French oak barrels (with a restrained use of new oak) preserve the mineral purity and tension for which the estate is renowned. Les Bouchères is prized for its lifted aromatics—white blossom, ripe orchard fruits, citrus zest and a signature note of fresh almond—supported by a subtle, smoky lees complexity.
