Domaine Fabien Coche’s Meursault Cuvée Ormeau 2021 is a fine expression of the prestigious Côte de Beaune terroir in Burgundy, crafted exclusively from Chardonnay grapes. The 2021 vintage was marked by a challenging growing season with spring frosts and cool conditions, resulting in lower yields but wines of great purity, tension and classic character. Domaine Fabien Coche employs traditional vinification methods, fermenting the must in oak barrels and allowing the wine to mature on its lees, followed by ageing in a proportion of new and seasoned French oak. This lends the wine a beautiful balance between delicate toastiness, creamy texture and vibrant, mineral-driven freshness typical of Meursault. Expect aromas of ripe orchard fruits such as pear and apple, subtle hazelnut, and hints of fresh butter and white flowers, underscored by a precise, lingering minerality.

The village of Meursault is celebrated for producing some of the most seductive white Burgundies thanks to its unique terroir. The limestone-rich soils sprinkled with marl are perfectly suited for Chardonnay, giving the wines both richness and chalky tension. The Côte de Beaune enjoys a semi-continental climate with warm summers and brisk nights, allowing grapes to ripen slowly and retain their natural acidity. Meursault’s winemaking heritage dates back centuries, and it remains a benchmark for elegance, finesse, and age-worthiness in white wines.

Meursault Cuvée Ormeau is a superb match for refined dishes. Its creamy texture and lively acidity will enhance seafood such as scallops in a beurre blanc sauce, lobster, or sole meunière. It also pairs beautifully with roast poultry in a light cream sauce, veal blanquette, or Burgundy classics like oeufs en meurette. For a regional pairing, try it with escargots de Bourgogne or mature local cheeses such as Comté or aged goat’s cheese.

For optimal appreciation, serve this Meursault slightly chilled, ideally at 12-14°C. Decanting it for a short time, around 20 minutes, will allow its subtle aromas and layered flavours to fully blossom in the glass. This wine is excellent now but will also reward cellaring for several years to reach even greater complexity.
