A beautifully intense bouquet, buttery pear. A crisp, sustained attack with a fine balance of acidity and sweetness on citrus notes. The lingering finish is elevated by a pleasant bitterness, offering superb length. Tasted alongside a creamy chestnut velouté with small chanterelles, finishing with a trout mousse with crayfish and langoustine cream. A perfect pairing in both cases.
