Veuve Ambal’s Grande Cuvée Brut Crémant de Bourgogne is a sparkling white wine crafted using the Méthode Traditionnelle, the same time-honoured process as Champagne. Although non-vintage, this cuvée reflects the signature style of the house, blending mainly Chardonnay and Pinot Noir grapes, possibly with some Aligoté and Gamay, to achieve a fresh yet elegantly structured wine. The grapes are handpicked from selected vineyards across the Burgundy region, ensuring both lively acidity and subtle complexity. During vinification, the base wines undergo a second fermentation in bottle and are left on lees, adding texture and delicate bread-like aromas that balance the primary fruit notes.
Crémant de Bourgogne hails from the historic Burgundy region in eastern France, an area celebrated for centuries for both its still and sparkling wines. The region benefits from a cool continental climate, which helps preserve the natural freshness and finesse of its wines. Limestone-rich soils, especially those found on ancient marine beds, impart minerality and precision. Although Burgundy is globally famous for prestigious Pinot Noir and Chardonnay still wines, Crémant de Bourgogne has earned its own reputation for refined sparkling alternatives that offer exceptional value and authenticity.
This Brut’s vivacity makes it a delightful companion to a wide range of dishes. Its lively mousse and crisp acidity pair beautifully with seafood such as oysters, scallops, or a classic pairing of smoked salmon blinis. For something more local, try it alongside gougères, traditional Burgundian cheese puffs, or jambon persillé, a parsleyed ham terrine. Its subtle autolytic notes also complement delicate sushi or vegetable tempura, cutting through fattiness and enhancing umami.
To enjoy this Crémant de Bourgogne fully, serve well-chilled at 6-8°C. Use tulip-shaped glasses to allow the aromas to open while retaining the effervescence. Pour gently to preserve the fine mousse, and savour young to appreciate its vibrant fruit, though it can rest in the cellar for a short time for further complexity.
