Domaine Dassault’s 2016 Cuvée D de Dassault from Saint-Émilion Grand Cru is a classic representative of the Right Bank Bordeaux. This wine, crafted mainly from Merlot, complemented by Cabernet Franc and a touch of Cabernet Sauvignon, showcases the plush, ripe fruit and supple tannins characteristic of the region. The 2016 vintage stands out thanks to its optimal growing season, producing wines with both structure and elegance. Vinification at Domaine Dassault adheres to strict selection, followed by careful ageing in oak barrels, of which a significant portion is new, enhancing both aromatic complexity and cellaring potential.

Saint-Émilion, nestled on Bordeaux’s Right Bank, benefits from a diverse terroir composed of limestone plateaus, clay-limestone slopes, and sandy soils in the lower lands. This geological diversity accentuates the roundness and mineral backbone in the wines. The region enjoys a temperate oceanic climate, ideal for Merlot ripening, with warm summers and balanced rainfall. Saint-Émilion itself is steeped in winemaking history, its UNESCO-listed medieval town centre attesting to centuries of viticultural tradition and craftsmanship.

This cuvée’s generous palate of black berries, plum and subtle notes of cocoa and cedar makes it an outstanding partner for dishes with depth and richness. Roasted lamb shoulder with garlic and rosemary captures the wine’s earthy undertones beautifully.
