Château Lamothe-Bergeron 2015 from the Haut-Médoc is a classic example of Bordeaux’s Left Bank expertise. This red wine is principally composed of Cabernet Sauvignon and Merlot, the region’s hallmark varieties, with possible smaller proportions of Petit Verdot and Cabernet Franc lending complexity. The 2015 vintage was outstanding in Bordeaux, marked by a warm, dry growing season producing ripe, structured wines. The gravelly soils of the Haut-Médoc, particularly around Cussac-Fort-Médoc where this château is situated, are ideal for ripening Cabernet Sauvignon, which imparts depth and longevity. Savour it alongside a rib of beef, roast lamb with garlic and rosemary, or duck breast. For a local twist, entrecôte à la bordelaise, prepared with a red wine shallot sauce, is a perfect match. Mature cheeses such as Comté or aged Manchego will also work beautifully.
