The Notre Dame des Bois 2021 from the Pomerol appellation is a stunning Bordeaux red wine. This wine hails from the renowned Libournais sub-region, made famous by its Merlot-dominant blends, although it is common to see it accompanied by Cabernet Franc. The 2021 vintage in Bordeaux presented some challenges with its wet spring and cooler summer; however, skilled vintners were able to produce wines with remarkable freshness and elegance. Pomerol is celebrated for wines that combine intensity with subtlety, often exhibiting rich plum, blackberry, and earthy notes with velvety tannins. The terroir of Pomerol consists of a unique gravel and clay soil that contributes to the complexity and finesse of the wines, coupled with careful vinification that might include traditional methods such as hand harvesting and fermentation in small vats.
