Château S Ifs 2022 from the Côtes-de-Bourg AOC is a classic Bordeaux red showcasing the unique character of the Blayais and Bourgeais subregion. This “Cuvée Spéciale” is typically a blend dominated by Merlot, complemented with Cabernet Sauvignon and perhaps a touch of Malbec or Cabernet Franc, although the precise proportions can vary by vintage. The 2022 vintage benefitted from favourable weather conditions, promoting both ripeness and freshness in the grapes. Vinification would have been carried out traditionally, with careful extraction during fermentation to preserve fruit purity and structure, followed by maturation in vats and possibly a period in oak to add complexity and subtle spice notes.
Côtes-de-Bourg is located on the right bank of the Gironde estuary, and is sometimes called the “little Switzerland of Gironde” thanks to its rolling hills and varied landscapes. The region enjoys a temperate maritime climate, providing a long growing season and protection from extreme weather. Its soils are notably diverse, with clay-limestone and gravelly outcrops that favour the development of deeply flavoured, supple and structured reds, particularly from Merlot. The area has a long history of winemaking, famed for producing generous, approachable Bordeaux wines with character and excellent value.
This robust yet harmonious cuvée pairs beautifully with classic Bordelais cuisine and hearty fare. Try it with grilled ribeye steak, confit duck, or a slow-cooked lamb stew. Regional dishes like entrecôte à la bordelaise (beef in red wine and shallots) or magret de canard will highlight the wine’s supple tannins and dark fruit profile. For cheese, opt for aged Comté or Cantal.
Serve this Côtes-de-Bourg at 16-18°C to best appreciate its bouquet of ripe black fruit, subtle spice, and earthy undertones. Decanting for 30 minutes will help soften young tannins and allow its aromatic complexity to unfurl. Enjoy now for its vibrancy, or cellar for a few years to gain additional depth.
