Domaine Bilé’s Floc de Gascogne Rouge is a traditional, fortified sweet wine originating from Gascony, in the foothills of the Pyrenees. Produced without a specified vintage, this wine is crafted by blending freshly pressed grape juice—generally from local varieties such as Merlot, Cabernet Franc, or occasionally Tannat—married with young Armagnac eau-de-vie. This union creates an aromatic, deep-hued wine, rich in red fruit flavours and marked by hints of prune, cherry compote, and subtle floral notes, all carried by a velvety sweetness. The texture is typically smooth, and the finish is gently warming, echoing the influence of the spirit addition.
The greater South-West (Sud-Ouest) region is celebrated for its diverse climates, ranging from oceanic to mountain-influenced, with the Gascogne area benefitting from mild winters and warm, sun-drenched summers. The soils here are characterised by a combination of clay, limestone, and sand, ideal for growing a range of robust local grape varieties. Gascony’s winemaking heritage is deeply rooted in tradition, especially where Armagnac and its by-products like Floc de Gascogne are concerned. The practice of “mutage”—fortifying grape juice with spirits—dates back centuries and adds heritage as much as complexity to this occitane delicacy.
As an aperitif, Floc de Gascogne Rouge pairs smoothly with pâté de canard, foie gras, or cured Bayonne ham, making it an excellent companion for the region’s celebrated charcuterie boards. It also suits desserts such as black cherry clafoutis, red fruit tarts, or dark chocolate creations, where its fruit-driven sweetness and gentle heat balance richness.
For an optimal tasting experience, serve Floc de Gascogne Rouge well chilled, between 6 and 8°C. This will showcase its aromatic brightness and lively palate, making it a festive and convivial treat at any table.
