Crafted exclusively from Vidal, a hybrid grape renowned for its resilience and natural acidity, this wine owes its rich sweetness and vibrant freshness to a remarkable process: the grapes are left on the vine well after autumn’s harvest, only to be handpicked and pressed while frozen, typically at temperatures below -8°C. The concentrated must yields an intensely aromatic and unctuous nectar, offering notes of ripe apricot, candied citrus peel, tropical fruits, and a distinct honeyed richness. The 2023 vintage, matured in stainless steel to retain its vivacity, is particularly lively, with a balancing backbone of acidity that prevents the sweetness from overwhelming the palate.

The Niagara Peninsula, celebrated as Canada’s preeminent region for Icewine, owes its reputation to its continental climate moderated by the Great Lakes. Snow-laden winters and a long, temperate autumn allow grapes to ripen fully, yet remain on the vines until deep into winter—essential for Icewine production.
