Vidal is a versatile white grape variety, renowned for its remarkable adaptability to cool climates. Its aromatic profile is characterised by refreshing notes of citrus fruits, such as grapefruit and lemon, accompanied by subtle touches of green apple, pear, and, in some expressions, ripe tropical fruit. On the palate, Vidal wines typically display a vibrant acidity with medium body, offering flavours that are both crisp and mouth-filling. In its sweetest iterations, particularly in icewines, aromas and flavours of honey, apricot, and candied citrus peel become prominent, supported by a lush and velvety texture.
Vidal finds its most distinguished expression in Canada, specifically within the Niagara Peninsula and other regions of Ontario and British Columbia. Small plantings can also be found in the United States’ northeastern states.
Most commonly, Vidal is crafted into luscious dessert wines, with icewine being the flagship style—here, the grapes are harvested and pressed while frozen, concentrating sugars and flavours. Nonetheless, dry and off-dry table wines are also produced, highlighting Vidal’s lively fruit character.
Recommended food pairings include blue cheese, foie gras, fruit-based desserts, and pâté for sweet versions, while drier styles suit seafood, poultry dishes, and lightly spiced Asian cuisine.
