The grape variety Zilavka

Zilavka is a distinguished white grape variety originating from the Herzegovina region in Bosnia and Herzegovina, also thriving in parts of North Macedonia and Montenegro. This grape yields wines characterised by a delicate, straw-yellow hue and a fresh, vibrant aromatic profile. On the nose, Zilavka typically presents elegant citrus notes, green apple, pear, and white flowers, sometimes accompanied by subtle hints of honey and almond. The palate is marked by a harmonious balance of crisp acidity and moderate body, delivering flavours of lemon zest, ripe orchard fruits, and a distinctive mineral undertone, reflective of the limestone-rich soils from which it is grown.

Zilavka is most commonly vinified as a dry, unoaked white wine, emphasising purity and freshness, although select producers experiment with fermentation or ageing in oak to enhance complexity. Premium examples can develop a graceful, creamy texture and a lingering finish. Zilavka wines are extremely food-friendly, pairing especially well with Mediterranean cuisine, shellfish, grilled fish, poultry dishes, and light cheeses.
