Viniou Reviews

This 2016 Perroy Grand Cru, crafted by Cave du Consul, is a distinguished expression of Cabernet Sauvignon from the Vaud region of Switzerland. The wine displays a deep, garnet colour, promising a rich structure and remarkable character. On the nose, expect classic Cabernet Sauvignon notes—blackcurrant, blackberry, and a hint of green pepper—layered with subtle undertones of cedar and smoke from careful ageing. The palate combines dark fruit with well-integrated tannins and an elegant acidity, resulting in a balanced and lingering finish. The meticulous vinification respects the varietal purity, while the Grand Cru designation speaks to the exceptional quality of the Perroy terroir, renowned for its gentle slopes and privileged exposition.

Vaud, stretching along the northern banks of Lake Geneva, enjoys a temperate continental climate moderated by the lake’s influence. This region is celebrated for its varied soils, where clay-limestone dominates, providing both excellent drainage and mineral complexity to the wines. Perroy, in particular, is a historic village whose vineyard terraces date back to Roman times, benefiting from a unique microclimate thanks to sun exposure and reflected light from the lake surface. Though most famous for Chasselas whites, Vaud has been steadily earning respect for its reds, especially those crafted from noble varieties like Cabernet Sauvignon, which thrive here and develop unusual finesse.

For food pairings, this structured yet supple red will complement robust dishes such as roast lamb with rosemary, char-grilled beef, or a hearty venison stew. For a more local touch, try it alongside Vaud specialities such as “saucisson vaudois” with lentils or traditional cheese-based dishes like “papet vaudois” (leeks and potatoes with sausage). The wine’s depth also marries beautifully with aged Swiss hard cheeses, such as Gruyère or L’Etivaz.

To fully appreciate its complexity, serve this Cabernet Sauvignon at 16-18°C. Decanting for an hour before tasting will allow the aromas to express themselves more fully, enhancing the enjoyment of this elegant Swiss red.
