Viniou Reviews

Donatsch’s 2017 Cuvée Unique Pinot Noir hails from the Grisons (Graubünden) region in eastern Switzerland, a terroir renowned for producing some of the country's most elegant red wines. This Pinot Noir, crafted by the esteemed Donatsch estate, embodies the distinctiveness of Swiss winemaking. The 2017 vintage benefited from a favourable growing season, lending the wine a balanced structure and notable finesse. The grapes are sourced from carefully selected vineyard parcels, where meticulous attention in the vineyard and thoughtful vinification in the cellar ensure a pure and expressive character. Expect a wine that showcases vibrant red fruit—think wild strawberry and red cherry—complemented by subtle notes of earth, spice, and a hint of forest floor, typical for Pinot Noir from the region. Its delicate tannins and lively acidity are hallmarks of both the grape and the cool climate.

The Grisons region, nestled along the upper reaches of the Rhine, is Switzerland's most prominent area for Pinot Noir, locally called Blauburgunder. The continental climate, moderated by Alpine influences, provides warm days and cool nights, perfect for slow, even ripening of the grapes. Soils here are varied but often feature limestone and slate, lending a pronounced minerality and elegance to the wines. The region boasts a long tradition of winemaking dating back to Roman times, and today is recognised for its forward-thinking producers who marry tradition with innovation.

This Pinot Noir’s refined profile makes it an excellent partner for a range of dishes. To highlight its regional pedigree, pair it with Bündnerfleisch—Switzerland’s celebrated air-dried beef—served with rustic bread. It also complements roast poultry, veal, or mushroom-based dishes, as well as creamy Alpine cheeses such as Tête de Moine or Vacherin Mont-d’Or. The wine’s fresh acidity and gentle tannins also allow it to shine alongside lighter fare like grilled trout or rösti with herbs.

For optimal enjoyment, serve this Pinot Noir slightly chilled, at 14–16°C, in a burgundy glass to accentuate its bouquet. Decant for 30 minutes if possible, to fully reveal its complexity and allow the seductive aromas to unfold.
