Štoka’s Cuvée Carsus 2016 from the Vipava Valley is a captivating red blend, hailing from the heart of Slovenia’s Littoral wine region, Primorska. Drawing on local grape varieties and possibly incorporating some of the international classics, the blend showcases the unique signature of this historic wine area. The 2016 vintage emerged from a year marked by favourable growing conditions, allowing full grape maturity and nuanced flavour development. The wine is vinified with care, respecting both tradition and innovation: gentle extraction preserves the fruit while aging—sometimes in large oak casks—lends subtle complexity and structure.
Vipava Valley itself is nestled at the intersection of Mediterranean and Alpine influences, creating a dynamic climate ideal for viticulture. The region is famed for its ‘bora’ wind, which, combined with sunlit days and cool nights, helps to create a vibrant acidity in the fruit. Soils are predominantly marl and limestone, lending minerality and finesse to the wines. Slovenian winemaking here dates back to Roman times, and today’s producers blend centuries-old heritage with modern sensibility, making wines with purity, precision, and authenticity.
Štoka’s Cuvée Carsus, with its harmonious blend, medium to full body, and fresh acidity, pairs beautifully with robust, flavoursome dishes. Think of grilled or roast lamb with Mediterranean herbs, braised beef, or local game such as venison stew. Regional Slovenian cuisine, such as jota (a sauerkraut and bean stew) or grilled klobasa sausage, will complement the wine’s earthy notes and lively fruit. Semi-hard cheeses like Tolminc or aged sheep’s cheese can also provide a delightful pairing.
For ideal enjoyment, serve this wine slightly cool to the touch, at a temperature of 16-18°C. Decanting for an hour will help it reveal its aromatic complexity and allow the tannins to soften, heightening your tasting experience. This wine, while already showing charm, can benefit from a few more years of cellar time if you prefer further integration and depth.
