Produttori del Barbaresco’s Riserva Pajè 2017 is a distinguished expression of Nebbiolo from one of the flagship appellations of Piedmont. The wine is crafted exclusively from grapes selected from the Pajè vineyard, a revered cru within Barbaresco, noted for its calcareous-marl soils and ideal south-western exposure. The 2017 vintage brought with it challenging spring frosts followed by a hot, dry summer, resulting in lower yields but highly concentrated fruit. Classical winemaking methods are applied, favouring long macerations and ageing in large Slavonian oak casks to enhance structure while bringing finesse and composure to the Nebbiolo grape’s natural intensity. The result is a vibrant, garnet-hued wine with a pronounced bouquet of rose petal, dried cherries, liquorice, and earthy undertones, supported by polished tannins and a long, complex finish.

Barbaresco sits in the Langhe hills of Piedmont, a region that enjoys a continental climate mitigated by cool breezes and significant day–night temperature variation, which supports a slow ripening of Nebbiolo and promotes the development of nuanced aromas. The soils, a mix of limestone and clay, contribute to the wine’s elegant tannic structure and freshness, distinguishing it from neighbouring Barolo. Barbaresco, historically overshadowed by Barolo, has in recent decades gained worldwide acclaim for its accessible yet ageworthy wines with refined power and notable aromatic complexity.

This wine calls for food with richness and depth to echo its intricate palate. Regional dishes such as braised veal cheek, tajarin pasta with truffle, or wild mushroom risotto are exceptional pairings, allowing the wine’s earthy and floral elements to shine. Hard, aged cheeses like Castelmagno or Pecorino also make for an elegant match.

Decant the Riserva Pajè 2017 for at least an hour to allow the bouquet to unfurl fully. Serve at 16-18°C to best appreciate the interplay between its delicate aromatics and finely tuned structure. This wine will reward patience, with even greater complexity emerging after a few more years of cellaring.
