Tenuta San Guido’s 2012 Sassicaia is a legendary Super Tuscan wine, crafted primarily from Cabernet Sauvignon with a small percentage of Cabernet Franc. The 2012 vintage benefitted from a temperate growing season, with a warm, dry summer balanced by cool nights conducive to slow, even ripening. The estate, nestling in Bolgheri near the Tyrrhenian coast, is renowned for its singular terroir. Gravelly soils evoke the Médoc and offer perfect drainage for the predominantly Bordeaux varietals. Sassicaia’s careful vinification includes fermentation in stainless steel, followed by ageing in French oak barriques, imbuing the wine with both finesse and impressive longevity.
Tuscany, with its rolling hills and Mediterranean climate, boasts a rich viticultural heritage. The proximity to the sea moderates temperatures, ensuring ample warmth while preserving fresh acidity in the grapes. The coastal strip of Bolgheri is relatively young in terms of fine wine history, yet it has made its mark globally thanks to visionary winemaking and an embrace of international varieties. Historic estates such as Tenuta San Guido infuse modern techniques with respect for the land, resulting in wines that express both place and pedigree.
Sassicaia 2012 offers enticing aromas of blackcurrant, tobacco, cedar and graphite, underscored by a finely-knit structure and velvety tannins. This wine is a superb partner for red meats such as Chianina beef, whether grilled tagliata or a classic bistecca alla Fiorentina. Its complexity and poise also complement game, wild boar ragù or aged cheeses like Pecorino Toscano. Truffle dishes, such as hand-cut pappardelle with black truffle, will also harmonise beautifully, highlighting the wine’s subtle savoury nuances.
For optimal enjoyment, decant the Sassicaia 2012 for an hour to allow full expression of its bouquet. Serve at 16-18°C, and savour its elegance alongside well-chosen, flavourful dishes that reflect the best of Tuscan gastronomy.
